Coconut-lemongrass curry
Ingredients
- Coconut milk
- Water
- Salt
- Sugar
- Lemongrass
- Lime (or other citrus) leaves
- Galanga
- Ginger
- Turmeric
- Tamarind (optional)
- Broccoli
- Tofu
- Tomatoes
- Potatoes
- White mushrooms
- Butternut squash
- Baby corn
- JalepeƱo/serrano slices
- Red bell pepper, cut into strips
Instructions
Fry tofu until crispy. Toss everything in a pot and simmer until done, except if you use bell pepper, only add that at the very end.
Serving suggestion
Eat with white rice, or better yet, sticky rice. Don't eat the lemongrass or citrus leaves.
