Ingredients
Berbere spice mix
- Smoked paprika (the smoky flavor is essential)
- Turmeric
- Cinnamon
- Ground ginger
- Nutmeg
- Salt
- Coriander
- Cumin
- Cardamom
- Cayenne
- Allspice
- Cloves
- Fenugreek
- Black pepper
Lentils
- Butter
- Diced yellow onion
- Garlic
- Tomatoes and tomato paste
- Berbere spice
- Red lentils
- Broth (or just use water)
- Bay leaves (optional)
Instructions
Toast and grind the dry, whole spices to make berbere spice powder. Cook onion and garlic in butter. Then add everything else and simmer for around 45 minutes.
Serving suggestion
Serve with injera or some other sort of sourdough bread.
