Roasted sunchokes

Ingredients
- Sunchokes (aka Jerusalem artichokes)
- Olive oil
- Salt
- Black pepper
- Thyme
- Lemon juice, honey, garlic, and other herbs (all optional)
Instructions
Cut sunchokes into half-centimeter-thick pieces. Toss all the ingredients together, then bake them at 400F for 20 minutes. Stir, then bake for another 15 minutes.
Serving suggestion
Eat this as a side dish, or mix it into a Greek salad.
Notes
Sunchokes are delicious, but they contain inulin, which can cause digestive problems. So don't eat to much, or you'll feel it the next day.
