Salade niçoise
Ingredients
Salad
- 1 head romaine lettuce
- 4 cups red or gold potatoes
- 1 can garbanzo beans
- 1 beet
- 1/3 can kidney beans
- 12 oz frozen green beans
- 1/3 can hearts of palm
- Several tomatoes
- More kalamata olives than you can count
Potato sauce
- Olive oil
- Dijon mustard
- Minced garlic
- Marjoram
- Thyme
- Sage
- Basil
- Salt
- Pepper
- Oregano
Dressing
- Minced shallot
- Red wine vinegar
- Olive oil
- Dijon mustard
- Salt
- Pepper
- Rosemary
Instructions
Cube potatoes and coat them in sauce, then roast them. Slice romaine lettuce with a knife. Boil beets, then cut them into strips. Mix everything together, except the dressing. Then put the dressing on.
